Add a little twist to breakfast to give your eggs something extra.
The concept is pretty simple: slice disks of pepper, put them in a butter-filled pan, and crack your eggs inside the peppers to create contained shapes.
You’ll need:
- 1 bell pepper
- 2-4 eggs
- Optional: shredded cheese and/or green onions.
There are only two things to keep in mind:
- Slice the peppers in increasing thickness as the pepper’s diameter decreases, to leave enough volume to contain the egg.
- Cover the pain to cook the eggs evenly, to account for the eggs being thicker.
Top with your favorite shredded cheese or green onions. Enjoy!
